When the chickpeas are not part of your healthy diet, it should be!

Chick peas are one of the healthiest things you can eat and for a number of reasons. They are a legume, and like many other legumes, are full of protein and fiber. Both these ingredients are essential to stimulate the metabolism and help the body burn more calories and fat.

The protein also helps to build and maintain lean muscle mass, while the dietary fiber helps digestion and expands in your stomach while you feel more satisfied and avoiding those pesky cravings.

Chickpeas are naturally low in fat and sugar, and contain carbohydrates are complex and unrefined. Being high in iron, thiamine, folic acid and zinc, are a great source of energy and provide an all-around nutritional Boost.

So in my book, the chickpeas are definitely a super food, and contain everything you need to stay healthy and energized.

Today, I'm offering a chickpea salad recipe healthy and delicious. When it comes to salads, you can get much healthier than this!

For all these ingredients, I recommend going organic whenever possible. Find organic chickpeas is fairly easy, and are relatively affordable when you consider the nutritional content.

Ingredients:

2 boxes of organic chickpeas, thoroughly rinsed in cold water and .5 Cup of chopped drained roasted red pepper .5 Cup of halved cherry tomatoes .25 Cup of black olives1 chopped bunch parsley, chopped1 bunch green onion, chopped3-4 cloves garlic, mincedJuice from lemon2 1 tablespoons extra-virgin olive oil1 teaspoon balsamic vinegarSalt and pepper to taste.

Directions:

Toss all ingredients in a large bowl and refrigerate for an hour or so before serving for best flavor incorporation. It is recommended that you use freshly ground pepper and sea salt if you have it, and as I said, try to go with these organic ingredients! Your body and your taste buds will thank you.

This is a salad super healthy and incredibly refreshing. It's perfect for summer and can be served as a side or enjoyed on its own.
